Class details:
In this workshop, we will focus on making your first sourdough loaf a success. We will make a large loaf using Rizz, our young and homegrown sourdough starter. The class will start with coffee and a selection of pastries from our bakery. Ria will then talk briefly about sourdough making from start to finish. The class will be shown 2 different flours and how to mix dough using a mixer. Ria will discuss the elements of fermentation and the effects of key factors such as temperature and time. Each participant will get a piece of dough to shape and place in their banneton. The group will then have a go at scoring (slashing) dough to bake in the oven. There will also be a short demo on baking in a Dutch oven. The class will be able to compare Dutch oven baking to open baking with steam. At the end of the class, participants will take home their dough to cold proof in their fridge overnight and bake in the morning.

Class size: Max 8 people, minimum 4 people to run the class
Cancellation policy: 
  • 2 weeks before class - 100% refundable, or can be rebooked
  • 1 week before class - non-refundable, can be rebooked
  • Less than a week before class - non-refundable, cannot be rebooked
Attire:
Participants must wear closed comfy shoes, long pants, have their hair tied back, and must bring their own apron.
